Coffee grows beneath grevillea, avocado, native, and fruit trees, while composted leaves, branches, and coffee pulp help nourish the soil and sustain the farm’s diverse habitat. After harvest, Fredy selects only the ripest cherries, washes away immature fruit, and slowly dries the coffee on raised beds for 25 to 30 days.
